Ingredients

Tortellini, Tomatoes, Spinach, Olive Oil
Directions
1. Prepare tortellini as directed on package.
2. While tortellini are cooking, dice tomatoes and rinse spinach. Place the spinach leaves in the colander you will use to drain the pasta.
3. Once the pasta is cooked, drain it, pouring it over the spinach. The hot water will wilt the spinach a bit.
4. Return the pasta and spinach to the pot or to a serving bowl. Add tomatoes, olive oil, and pepper to taste.
Makes two bowls, about 2 cups each. Top with shredded cheese
Note: You can use any quantity of vegetables. This seems to provide a nice balance, but more spinach would be good if you have a bigger colander.
