Ingredients

    6 Large Green Onions
    2 15 oz cans Diced Tomatoes
    1 Large Head of Cabbage
    2 Green Peppers
    1 Bunch Celery
    1 cup Shitake Mushrooms, or to taste
    1 Hot Pepper (serrano or any you choose)
    3 Cloves Garlic
    Olive Oil , 1 tbsp
    Chicken, Beef or Vegetable Stock/Bouillon , 8 cups
    Black Pepper, to taste
    Parsley. to taste
    Choice of seasoning - Rosemary,
    Sage, Thyme, Tarragon or Oregano, to taste
    Water, 2 cups plus to cover

Directions

Cut vegetables into small pieces. Add vegetables and olive oil to a stock pot and saute all until onion sweats. Add water to cover and bring to a boil for ten minutes total. Next, add 2 cups water, broth and tomatoes and reduce to simmer, cooking covered until vegetables are tender. Add seasonings ten minutes or so after starting simmer and choose seasoning that complements the broth selected.

If you want a different consistency, you may use additional water or broth.
