Introduction

These recipe can be made with any type of potatoes, but baking potatoes make the fluffiest mashed potatoes. The best thing is that the kids have no idea that they are eating vegetables. LOL!! Ingredients

    1 lb. baking potatoes, peeled and cubed
    1 tsp. salt
    1/2 cup fresh cauliflower florets, cut from core
    2 TBSP margarine spread (soft tub kind)
    1/2 cup lowfat (1%) milk

Directions

1.Steam cauliflower until tender when pierced with a fork, about 8-10 minutes. Mash the cauliflower or put in a food processor until smooth.

2.Put the potatoes and salt in a large pot and add enough water to cover the potatoes by about 3 inches. Bring to a boil over high heat, then reduce the heat and simmer until the potatoes are tender when pierced with a fork. about 15, 20 minutes. (you could also steam them for about 30 minutes.) Drain well in a colander.

3. Return the potatoes to the pot and mash with a potato masher. Add the mashed cauliflower, margarine, and milk, and beat with a large spoon until the potatoes are smooth and creamy.

    This is a great idea. My kids like veggies but not cauliflower. This way we adults can enjoy their health benefits without the kids even knowing. Very Good! - 2/28/10
