These can be made as a loaf of bread or as muffins. These can be made as a loaf of bread or as muffins.

    1 cup brown sugar, Rapadura, or honey
    1/2 cup softened butter
    2 large eggs
    1 1/2 cup mashed ripe bananas
    1/2 cup coconut milk
    2 cups whole wheat flour
    3/4 tsp. baking powder
    3/4 tsp. baking soda
    1 cup shredded coconut meat


Preheat oven to 350.

Cream sugar and butter together

Add eggs, beating until light.

Stir in bananas and coconut milk.

Combine and add flour, baking powder, baking soda, and coconut meat.

Pour batter into greased loaf pan, mini-loaf pans, or muffin tins and bake for 1 hour or less, depending on pan size. Snack is ready when middle is cooked through.
