Ingredients

    1 tbsp butter (olive oil can be used, if preferred.)
    1 c. onions, diced
    3 c. 99% fat free chicken broth
    1 c. Bulghur, aka Cracked Wheat
    1/2 c. fresh parsley, chopped

Directions

Saute onions in butter over very low heat for 10-15 minutes. If pinched for time, you can do it faster, over higher heat, but the longer you take to cook them, the sweeter, more flavorful they'll be. When onions are done (will appear transluscent,) add the broth and bulghur. Bring to a boil, then set over low-medium heat to simmer 25-30 minutes, stirring occasionally. Before serving fold in the parsley.
