Introduction

This is an adaptation of a recipe from a favorite restaurant that doesn't operate where I live. The fresh taste of this always makes me feel like summer time. The mixture of fruits/veggies is also great on plain grilled meat. I make up quite a bit of it and freeze it in individual serving bags so I can either have it on the salad or as a topping/side dish for meat. Ingredients

    1/4 c grilled chicken breast, rough chopped
    1 c shredded romaine lettuce
    1/4 c sweet red pepper, seeded, chopped fine
    1/4 c red onion, chopped fine
    1/4 c tomato, seeded, chopped fine
    1/4 c canned pineapple tidbits, well-drained
    1/8 c chow mein noodles
    1 T rough chopped Walnuts
    1 t granulated sugar
    2 T reduced fat or fat free, light ranch dressing

Directions

Prepare the chopped vegetables and the pineapple. Mix together and set aside for a few minutes to let the flavors blend.

Mix the walnuts and sugar together in a baggy to lightly coat the walnuts in the sugar. Discard the excess sugar.

Place the lettuce, chicken, veggie/fruit blend, walnuts and chow mein noodles in a bowl and top with a bit of dressing.
