Introduction

This is my favorite reduced calorie version of the real thing. This is my favorite reduced calorie version of the real thing.
Number of Servings: 4

Ingredients

    1 pound (4--4 oz pieces) thinly pounded
    2 large egg whites, lightly beaten
    1/2 cup dried bread crumbs
    1/2 tablespoon Italian seasoning
    1 teaspoon olive oil
    1 1/2 cup canned tomato sauce
    1/2 cup part-skim ozzarella cheese, shredded
    1 tablespoon grated parmesan

Directions

Preheat oven to 350. Coat an 8 inch square pan with cooking spray.
Dip chicken in egg whites, turn to coat. Then mix bread crumbs with Italian seasoning and dip chicken in bread crumb mixture; turn to coat thoroughly.
Heat oil in a large skillet; add chicken. Cook until lightly browned and no longer pink in center, about 4 minutes per side; place on paper towels to drain.
Pour 1/2 cup of sauce into prepared baking dish;place chicken in dish and pour remaining sauce evenly over chicken. Sprinkle with cheeses and bake until bubbly, about 25 minutes.

    Very Good
    Made this for dinner tonight and it was a BIG hit. I made it with cornflakes instead of bread crumbs and I used Corn Flour pasta as a side. Fantastic - 2/22/11

    Incredible!
    I have made this recipe and it is SO good. I am making it again tonight! We serve it with a salad and some whole grain pasta. It reheats well. - 1/11/10
