Introduction

A quick meal that everyone seems to like. Plus it's fine to just throw whatever veggies you have on hand into the mix. A quick meal that everyone seems to like. Plus it's fine to just throw whatever veggies you have on hand into the mix.

Ingredients

    1 lb chicken breasts cut into bite size chucks
    cornstarch
    olive oil
    mushrooms -canned
    water chestnuts (found in ethnic food section)
    tomatoes
    baby corn
    soy sauce

Directions

Makes roughly 6 servings

Cut up chicken and roll in the cornstarch to cover.
Put oil in a frying pan (electric works best for me) and add chicken. Cook through.

Add mushrooms and water chestnuts and baby corn. Cook for another 5 minutes.

Add tomatoes and cook until just warmed through.

Add soy sauce and serve (add soy sauce to taste, other sauces that work well include peanut sauce).

I generally serve this over rice.
