Ingredients

    1 lb extra lean ground beef
    1 medium sized onion
    14 oz. can of tomato sauce (any variety)
    1 14 oz. can of stewed tomatoes (optional)
    4 cloves garlic
    1 pkg. fajita (any brand) seasoning mix
    6 cups water
    4 oz. goat cheese
    4 oz. half and half cream
    1.5 cups mixed vegetables
    1 cup pasta of choice

Directions

Brown ground beef, onion, and garlic until beef is done. Add fajita mix, tomato sauce, stewed tomatos, and water. Bring to a boil, then turn to medium heat. Add mixed vegetables and 1 cup pasta. Cook for approximately 10 minutes on medium heat. Crumble and slowley add goat cheese and then add half and half cream. Cook until cheese is melted. Serve alone or over cornbread. Makes 10 1.5 cup servings.

    Incredible!
    Like the other member I added a bit more burger, instead of half and half I used evaporated milk and in place of goat cheese I used riccota. With the changes I made it didn't look very good but tasted great lol - 5/15/13
