Introduction

Stuffed with cheese, black beans, ro-tel, and pork tenderloin Stuffed with cheese, black beans, ro-tel, and pork tenderloin
Number of Servings: 3

Ingredients

    1 Can (15 oz) Black Beans (Drained and Rinsed)
    1 Can (10 oz) Rotel Original Diced Tomatoes & Green Chilies (Drained and Rinsed)
    1/2 Cup Shredded Sharp Cheddar Chese
    6 oz. Cooked Pork Tenderloin (Cubed)
    2 Poblano Peppers (Sliced down middle, deseeded, leave cap on)

Directions

Fold together first four ingredients, stuff into pepper.

Wrap in foil and grill for 20 minutes. (Do not flip)

    It was a good idea, but without any spice...very bland. My husband followed the recipe adding only salt and pepper to the meat (we used ground chicken instead of pork). It needed something else...tomato sauce, corn and some seasoning maybe? Will work on my own twist next. Thanks for the great idea! - 2/2/09

    This sounds like a terrific idea. I personally would add some garlic and onion, cumin, and cilantro, but I intend to try this. Thanks. - 1/27/09

    Very Good
    These were a little bland so I added chili powder, garlic and a touch of cayenne. They turned out so yummy. A little low fat sour cream on top and it was perfect. Thanks. - 1/20/10
