Ingredients

2 pounds ground beef
1 large onion, chopped
1 can black beans drained and rinsed
1 can (15-1/4 ounces) whole kernel corn, undrained
2 cans rotel diced tomatoes with chiles
5 tablespoons tomato paste
1 packet taco seasoning mix
1-1/2 cups (6 ounces) shredded cheddar cheese
3/4 cup yellow cornmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1 egg, well beaten
1 cup buttermilk

Directions:
In a large skillet, cook the beef and onion over medium heat until meat is no longer pink; drain. Add the corn, tomatoes, tomato paste, black beans, corn, rotel chilies, and taco seasoning mix. Cook and stir until heated through; keep warm.
Mix cornmeal, baking powder, and bakin soda. In a separate dish beat egg and add buttermilk. Mix with dry ingredients. Pour half into baking dish. Top with beef mixture and cheese. Pipe remaining cornmeal mix around edge of dish; sprinkle with remaining chili powder.
Sprinkle cheese over top.
Bake, uncovered, at 325° for 20-25 minutes or until cheese is melted. Let stand for 5 minutes before serving. Yield: 12 servings
