Introduction

Ingredients

    1/2 small avocado, peeled and cut into chunks
    4 tsps fresh lime juice
    1/8 tsps salt
    4 (8 in) whole wheat torillas
    2 cups frozen spinach leaves, thawed, squeezed dry, and chopped
    3 Tbls sliced jalapeno peppers drained
    3 Tbls cilantro leaves
    1 cup Monterey cheese shredded, fat-free

Directions

Put the Avocado, lime juice, ad salt into a bowl; mash with a fork Spread a thin layer of the mixture over one-half of the tortilla and top with spinach Sprinkle with each with jalapeno, cilantro, and cheese. Fold over the tortillas to enclose filling.

Heat a nonstick pan over medium heat. Working in two batches, cook the quesadillas in the pan until brown, about 3 minutes on each side.
