Ingredients

1 box frozen spinach, defrosted
1/2 cup ricotta cheese
1/4 cup grated Parmesan Cheese
1 cloves garlic, grated or finely chopped
Salt and freshly ground black pepper
A few grates nutmeg
2 chicken breasts sliced lengthwise in half
4 slices Turkey Bacon
Directions
Preheat oven to 400 degrees F.
Wring out defrosted spinach in clean kitchen towel.
Combine with spinach in a bowl, mix in cheeses, garlic, salt, pepper and nutmeg.
Cut into and across all the way through the chicken breasts. Season the chicken with salt and pepper. Fill each with a small mound of stuffing, roll up and wrap each breast with bacon to seal them, carefully covering the whole breast. Brush chicken all over with some extra-virgin olive oil and roast 18 to 20 minutes until cooked through.

This was yum! I wasn't sure how much 1 box of spinach equalled, so I used two blocks from a packet of frozen spinach (UK sizes). There was a bit too much spinach to stuff the chicken and it overwhelmed the dish. I'd halve the amount of spinach next time, and maybe add some ground chilli pepper. - 7/26/12
