Introduction

Healthy comfort food. Typically served with rice in Peru. I like to throw in fresh mushrooms sometimes. Small ones, or sliced if large. Healthy comfort food. Typically served with rice in Peru. I like to throw in fresh mushrooms sometimes. Small ones, or sliced if large.
Number of Servings: 2

Ingredients

    7 ounces boneless chicken breast
    1 medium onion
    1 medium tomato
    2 cups French Cut Green Beans frozen
    3 cloves of garlic
    1 large clove of Shallots
    2 tbsp of Olive Oil
    Salt and Pepper to taste

Directions

Mince garlic and shallots. Add to pan with olive oil and start to cook. Chop onions and add to pan. Cut up chicken into small pieces, about 1/2 and inch long and 1/4 of an inch wide. Add to pan. Chop up tomato and add to pan. Cover and reduce heat. Let simmer for about 5 minutes. Add salt and pepper and mix well. Add frozen green beans and mix well. Bring back up till it's bubbling. Cover and reduce heat. Let cook for about 5 minutes.
