Introduction

Ingredients

    1 Box piccolini pasta
    2 lb plum tomatoes (washed and halved)
    2 Tbls extra virgin olive oil
    1 Tbls chopped onion
    1 tbls chopped garlic
    1 cup grated parmesan
    4 basil leaves, chopped
    salt and pepper to taste

Directions

Boil and drain pasta according to directions (7 min for al dente).
Saute onion and garlic in olivie oil over medium heat for 5 minutes. Add cooked pasta and toss with oil. Fold in tomatoes.Stir in cheese and basil right before serving.
Makes 8 servings.

    Incredible!
    This was a huge hit with my family. The nice thing is that you can serve it with many types of meat. Also, if you like balsamic vinegar, it is quite tasty with a few drops added to each portion. Don't cheat on the fresh basil, but you can use pre-grated parmesan and have great results. - 9/15/13
