Introduction
This is an old recipe from my mama. She fried them in crisco, I use canola oil and drain them well. I also serve them with a light caesar dressing. This is an old recipe from my mama. Ingredients

1 16oz can pink salmon,drained, reserve liquid
1 egg, beaten
1/3 cup minced onion
1/2 cup flour
1 1/2 tsp baking powder
oil for frying
Directions
Drain salmon, reserving liquid. In a bowl combine the salmon, egg, and onion. combine until sticky. Add flour and stir. Take 2 T of fish liquid in a small bowl and add the baking powder, stir until well combined and then add to the salmon mixture. Stir just until combined. Form this mixture into even balls then pat out to patties. I usually get about 10 patties. You can make them small and serve as an appetizer. Fry in hot oil until dark golden brown, and drain over paper toweling. I serve them with a green veggie and mashed potatoes and we dip them in a light caesar dressing.
