Ingredients

    6 medium flour tortillas
    6 oz cooked chicken breast, shredded
    1 cup tomatoes with green chilies
    1/2 cup canned corn
    1 cup prepared yellow rice (Zatarain's)
    150 g (one pot) Total 0% Greek Yoghurt
    1 can Old El Paso Green Chile Enchilada Sauce
    1 tsp crushed garlic
    1 tbsp chili powder
    1 oz cheddar cheese

Directions

Mix chicken, corn, rice, tomatoes, and spices. Divide mixture evenly among tortillas, and roll. Place in baking dish. Mix yoghurt with green enchilada sauce, pour sauce over enchiladas. Top with grated cheese. Cover with foil, bake at 350 for about an hour, or until hot and bubbly. Serves 4 - 6.
