Introduction

I got this recipe from my mum its a family fave. very yummy easy to throw together, can be made vegetarian if bacon removed. I got this recipe from my mum its a family fave. very yummy easy to throw together, can be made vegetarian if bacon removed.
Number of Servings: 6

Ingredients

    375g zucchini grated
    1 large onion, finely chopped
    1 cup self raising flour
    4 eggs, lightly beaten
    3 bacon rashers, finely chopped
    1 cup cheese, grated
    .5 cup oil
    salt and pepper to season.

Directions

Trim ends from zucchini and grate with out peeling. Finely chop onion and bacon. Combine all ingredients in a large bowl and mix well. Season with salt and pepper. Pour into a large pie dish(lightly greased) or other suitable oven proof container. Bake in a moderate oven. I use 170 deg C for 40 minutes or until a knife comes out clean.
I get approx 6 serves per pie but this can be used as a light lunch with a salad or a side dish at dinner ETC.
