Ingredients

    1 1/2 cup whole wheat flour
    1/2 cup cane sugar
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon nutmeg
    1/2 teaspoon cinnamon
    1 large egg
    1 large egg white
    1/3 can pumpkin
    1/3 cup unsweetened applesauce
    1 cup vanilla soy milk

Directions

Preheat oven to 350 degrees. Mix dry ingredients together. Mix wet ingredients together. Gently combine the dry with the wet ingredients. Do not over mix or the muffins will become tough. Spoon batter into a greased 12 cup muffin pan. Bake at 350 degrees for 30 to 35 minutes or until a toothpick inserted into the center of a muffin comes out clean.
