Ingredients

4 medium apples (about 1 1/4 lbs)

1 cup flour
3 Tbsp shortening, melted
1/4 cup brown sugar
2 eggs
2 tsp baking powder
1 tsp baking soda
1 Tbsp cinnamon
1 tsp vanilla
6 Tbsp evaporated nonfat milk

2 Tbsp honey
1 tsp vanilla
1 Tbsp powdered sugar
1 tsp water
1 tsp nutmeg
Directions
1. Grease and flour a deep 9" round cake pan or springpan.
2. Peel, core, and slice apples into thin slices (1/8"). Line pan with apple slices, standing them upright and circling around in the pan; stuff them in as tightly as possible and fill the center with smaller pieces or just a stacked bunch. Begin preheating oven to 325.
3. Combine melted shortening, eggs, milk, sugar, and vanilla.
4. Sift together flour, baking soda, baking powder, and cinnamon. Beat into sugar mixture until blended; batter will be thick.
5. Pour batter over apple slices. Level the top.
6. Bake for 40-45 minutes until deep golden brown and sides pull away from the pan. Cool cake in pan. Use a knife around the sides of the pan. Then, turn over cake onto a plate and thoroughly beat around the bottom of the pan to make sure the apple slices all release from the pan before removing the pan (release the sides after flipping and use a long knife between the pan and cake to remove the bottom, if using springpan). Carefully replace any apple slices that stick so that the form of the spiralling slices is kept.
7. Combine nutmeg, honey, water and vanilla. Heat and brush over cake. Dust with the powdered sugar (or granulated, as desired). Reheat before serving, if desired.
