Introduction

Ingredients

    4 8 inch whole wheat tortillas, 6 oz fresh spinach, 2 thinly sliced onions, 2 thinly sliced tomatoes, 1 t sugar, 1/4 t salt, 1 T olive oil, 1 T water

Directions

Heat 1 T olive oil in skillet, add onions, sugar and salt. Cook until lightly browned; remove and set aside. Add 1 T water and Spinach; cook until just wilted. Remove and set aside. On half tortilla shells, spread 1 oz goat cheese on each, add tomatoes, onions, and spinach. Fold in half, cook in skillet until until lightly browned and crisp. 1 Quesadilla is 1 serving.

    Incredible!
    YUMMMM. These are sooo good! The only change we made is to leave the goat cheese crumbled instead of spreading it. Seriously, a MUST try. - 7/1/13
