Ingredients

    1 med. onion, chopped
    2 gloves garlic, minced
    2 T. coconut oil
    4 c. beef broth
    4 c. chicken broth
    1 can Rotel
    1 tsp. ground cumin
    1 tsp. chili powder
    1 tsp. salt
    1 tsp. Worcestershire sauce
    2 c. cooked chicken breast, cubed
    1 c. frozen corn
    1 sm. zucchini
    shredded Monterey Jack cheese
    cooked rice
    avacado

Directions

Serves 6-8 one cups servings

In 4 quart saucepan, saute onion, garlic and oil. Add remaining ingredients, except zucchini. Simmer covered for 1 hour. Add zucchini and cook until tender. Serve over rice and garnish with avacado, cheese and tortilla chips.
