Ingredients

    3 oz. salmon
    about 3 leaves of basil (depending on how much you like basil you can add more)
    1 clove garlic minced
    5 cherry tomatoes cut in half
    1 lemon
    white wine (i usually use chablis)
    1 piece of tin foil

Directions

makes 1 serving:

take a piece of tin foil and fold all four sides upward. place salmon in middle of tin foil. place minced garlic and basil on top of salmon. use half the lemon and squeeze juice on top. cut two slices out of the other half and place on top of garlic and basil. put cherry tomatoes on and around salmon. pour wine over everything (i usually don't measure wine, just pour till 1/4 of the way up salmon).
Bake for 15-20 minutes or until cooked though. remove from foil and enjoy!

    I wasn't sure what temperature to use - I used 375 in the end. I had to make some substitutions - used dried basil instead of fresh, bottled lemon juice instead of fresh lemon, and a sliced tomato as I had no cherry tomatoes, and I left out the wine. End result still tasted OK! - 2/7/09
