Ingredients

    4 slices ciabatta bread
    1 large ripe tomato, diced
    2 scallions, finely sliced
    1 small fresh mazzarella cheese, part skin milk, diced
    1/2 ripe avocado, skinned, pitted, and diced
    1/2 tbsp balsamic vinegar
    2 tbsp extra-virgin olive oil
    Salt and pepper to taste
    2 tbsp shredded fresh basil leaves, to garnish

Directions

Toast the ciabatta bread.
Mix the tomato, scallions, mozzarella cheese, avocdo, balsamic vinegar, and half the oil together in a bowl. Season to taste with salt and pepper.
Drizzle the remaining oil over the ciabata toast and top with the tomato mixture.
Garnish with the basil and serve immediately.
