Ingredients

    3 cups of salad mix - (iceberg, romaine & red leaf)
    1 cup fresh spinach (I like the baby greens)
    1 cup chopped (1 med) tomato
    2 T extra virgin olive oil
    Juice of one lemon
    Generous amount of Morton's Nature Seasoning mix
    1 T shredded Parmesan cheese

Directions

Toss the greens and tomatoes. Can use whatever greens you like as well as add other vegetables you like - I like onions, bell peppers and cucumbers but my family doesn't. Add several shakes of Nature Seasoning. Drizzle with 2 T EVOO; squeeze lemon over salad. Toss well. Top with cheese and toss again.

    this sounds good to me im new to healthy olive oil so i wil try this for lunch - 11/23/08
