Introduction

This recipe came from my pastor's wife who's really into vegetables. The crisp-tender green beans and the crunch of the toasted almonds make this a wonderful spring and summer side dish! Number of Servings: 6

Ingredients

    1/3 cup almonds
    1&1/2 lbs green beans, ends snapped off and bean cut in half or quartered crosswise if large
    3 Tbsp extra virgin olive oil
    1 Tbsp white wine vinegar
    Salt and pepper to taste

Directions

Toast the almonds in a 350° oven untl they smell good and barely begin to turn pale brown, about 15 minutes.

Boil the green beans for about 5 minutes and rinse them in running cold water for about a minute until they are cool. Drain and pat dry with paper towels.
Just before servng, toss the beans with the almonds, oil, vinegar and salt(if desired) and pepper to taste.

MAKES 6 SERVINGS
