Introduction

These empanadas are great for dinner with a salad and fat free dressing or they can also be eaten as a snack . These empanadas are great for dinner with a salad and fat free dressing or they can also be eaten as a snack .

Ingredients

    Empanada Discos 10 pack (color or white), 5"
    (Try Goya or Rico)

    1 Chicken Breast, skinless, boneless, About 8oz, Diced

    2 tsp minced Garlic

    1/2 cup chopped Onion

    1 tbsp Sofrito Sauce

    1/4 tsp pepper

    1/4 tsp salt

    1 package of accent Sazon seasoning

    Olive oil cooking spray

    Skillet & Baking Sheet





Directions

Spray skillet; add diced chicken, garlic, onion, sofrito and all seasoning. Add a 2 tbsp of water for a juicier sauce. Once meat is cooked, lay out empanada disc and evenly fill with meat mixture. Fold each stuffed empanada in half and place of baking sheet coated with cooking spray. Spray tops of empanadas with cooking spray. Bake at 375 degrees for about 15-18 minutes until browned. Serve warm, top with salsa if desired. Calorie calculations are for 1 empanada, makes 10 servings. Remember if you eat two to double the calorie count, enjoy.
