Ingredients

2 cups whole wheat pastry flour
1 tablespoon sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 egg white
2 cups lowfat buttermilk
1 tablespoon vanilla extract
2 teaspoons olive oil
Directions
1. In a large bowl, combine the flour, sugar, baking soda, baking powder, and salt.
2. In a medium bowl, whisk the egg and egg white until very foamy.
3. Whisk in the buttermilk, vanilla extract, and oil.
4. Stir into the flour mixture just until combined.
5. Add water until desired consistency.
6. Heat waffle iron, spray with nonstick cooking spray.
7. Prepare waffles according to manufacturer's directions.
8. Serve with sugar-free syrup.
