Introduction
This macaroni and cheese dish is creamy and cheesy and full of flavor...you'd never know it was low fat. Definitely a good for you comfort food. Sometimes I even toss is some frozen broccoli before putting it in the oven. No leftovers from this tasty dish! Ingredients

2 c. elbow macaroni
1 1/2 c. cottage cheese
1/4 c. margarine
1/4 c. Flour
1/2 t. salt
1/4 t. white pepper
1/4 t. garlic powder
2 c. milk, nonfat
2 c. Kraft fat-free shredded cheddar cheese
Directions
Cook macaroni according to package directions. While macaroni is cooking, place the cottage cheese in a food processor and process until smooth. Set aside.
In a large saucepan, melt the margarine. Stir in the flour, salt, pepper and garlic. Stir until smooth. Gradually add the milk and bring to a boil. Cook and stir for two minutes or until thick.
Drain the macaroni and transfer to a large bowl. Add the cheeses and the white sauce. Add broccoli or other veggies if desired. Pour into a 13x9x2 baking dish sprayed with non-stick cooking spray. Bake, uncovered, at 350 degrees for 25 minutes or until bubbly.
Makes six servings.
