Introduction

Chili made with white beans (from dry), chicken breast and fresh veggies. Chili made with white beans (from dry), chicken breast and fresh veggies.
Number of Servings: 6

Ingredients

    1/2 cup each DRY navy and great northern beans
    2 c chopped red onion
    3 c chopped roma tomatoes
    2 c cubed boneless/skinless chicken breast (about 2 breasts)
    2 Tbsp chopped garlic
    1/2 Tbsp Cayenne Pepper
    1 tsp Ground Cumin
    1 tsp Oregano leaves
    2 tsp coarse black pepper

Directions

Soak beans overnight (or use quick soak directions on back of package). Drain and rinse well. Add 4 cups water and bring to a light boil, reduce heat and simmer about 45 minutes. Drain.
Put all ingredients in crockpot and cook on low 4 - 6 hours.
Serving size = 1 cup.

Note: I love my chili over brown rice.
