    2 cups small brown fava beans (or lima beans)
    4 cloves garlic, smashed
    1/2 tsp. ground cumin
    1/2 tsp. crushed red pepper
    salt to taste
    1/4 cup coarsely chopped cilantro
    1/4 cup coarsely chopped parsley
    6 scallions, roughly chopped
    2 plum tomatoes, coarsely chopped
    lemon juice
    olive oil (optional)


Soak beans in cold water overnight. Drain and transfer to a 2-quart saucepan along with garlic, cumin, chile, and water. Bring to a boil, simmer until beans are soft, about 45 minutes to an hour. Remove about 2/3's of the beans, puree the rest, return the reserved beans to the pot, salt to taste. Serve topped with tomato, parsley, cilantro, scallions, lemon juice and olive oil, if desired.

  • Keep in mind that what we in North America call "cilantro" is the fresh leafy version (also called Chinese Parsley. Other areas it's called Coriander leaves. What we call "coriander" is the seed part, has more of a citrus tart flavor, not the soap flavor chilantro haters object to. - 12/2/13
