Introduction
A twist on the southern candy. All the nutty, brown-sugar flavor of pralines in an easier-to-make, easier-to-store, and easier-to-eat bar. Also, for those who LOVE pecan pralines but find that eating pure sugar is slightly sickening, this is a great alternative. While still not a healthy snack, they are incredibly good and freeze well. Splenda can be substituted for about half of sugar. Not including edges: 1 1/3" by 2" bar per serving, 36 servings
Including edges, which are crispier and darker in flavor than the rest: 1 1/5" by 2 1/4" bar per serving, 44 servings. A twist on the southern candy. Ingredients
-
1 cup flour
2 tsp baking powder
3/4 tsp salt
-----------------------------
6 Tbsp butter, soft
1 cup sugar
3/4 cup brown sugar, packed
2 tsp vanilla
2 eggs
-----------------------------
5.5 oz pecan pieces (about 1 1/3 cup)
10 oz white chocolate chips (about 1 2/3 cup)
Directions
1---Mix together flour, baking powder, and salt.
2---In separate bowl, blend together butter, sguars, eggs, and vanilla.
3---Begin preheating oven to 325.
4---Mix flour and sugar mixtures until blended. Batter will be thick. Fold in pecans and white chocolate chips.
5---Grease a 9" by 13" pan. Pour batter into pan and level.
6---Bake 25-35 minutes, depending on how dark you want the bars. Bars are cooked when a toothpick inserted 2" from the edge comes out clean. ==Note: a hard, brittle crust forms on top long before the bars are done, so insert toothpick by "drilling" the tip through the crust (twisting it between your fingers).==
7---Cool bars before slicing; slightly warm is best for cutting. Use a sharp, serrated knife.
---If removing edges, cut about 1/2" from edges, all the way around, then slice six times each way to make 36 slices.
---If not removing edges, slice the short side into 4 long lengths, then slice the long side into 11 short lengths (start from corner and slice between every 1 1/8" and 1 1/4" inch).
