Introduction

Delicious protein kick under 225 calories early in the morning - and just as fast as driving to McD's to pick up the real (super unhealthy) thing! Cut out the slice of deli meat for vegetarian delight and to save about 30-50 calories. Ingredients

    1 English Muffin (Sourdough is my favorite but whole wheat is of course preferred) toasted
    1 egg, 0.25 cup egg substitute or 2 egg whites
    1 slice American cheese or simply a couple sprinkles of extra sharp cheddar
    1 slice tomato
    1oz slice turkey, ham, etc deli meat

Directions

Scrample and cook egg on stove. Once you've flipped it over the first time, add your sprinkle of cheese to top of egg, add your slice of deli meat to pan to heat and pop english muffin in toaster. Once cheese is melted, egg is done, and muffin is toasted put it all together with a slice of tomato and voila! I sometimes add a litle bit of salsa or taco sauce to give it a kick. You can also use egg beaters southwest style or whatever you like.

    Thanks! I've been craving them lately so I've been making them a lot. I add a little taco sauce and it is good!
