Introduction
Quick, light, easy and a wonderful healthy meal! It's low in carbohydrate! Perfect on mix vegetable with light salad dressing :) I LOVE it! I actually double/triple the recipe and freeze the patties for throughout the week. When I want it, I just pop it out and pan fried it with 1 tablespoon Olive Oil instead of grilling. Yummalicious!!! Ingredients

1 pound salmon fillets, skinned and cut into 2-inch pieces
2 tablespoons red onion, minced (1/4 small onion)
2 tablespoons fresh lemon juice (about 1 large lemon)
2 teaspoons lemon zest, grated (1 large lemon)
1 large egg
1/2 teaspoon salt
1/2 teaspoon black pepper
Directions
vegetable oil spray for grill OR I usually pan fried it with one tablespoon of Olive Oil.
1. Preheat grill to high.
2. Place salmon in a food processor and pulse until wellchopped,
about 30 seconds. In a medium bowl, mix
salmon with onion, juice, zest, egg, salt and pepper until
just-combined (do not over-mix). Form into six patties
and chill in the freezer.
3. Spray grill oil spray and cook patties covered until just
cooked through, about 3 minutes per side.
The reciep says that you can substitue the fresh salmon with three 6-ounce canned salmon. I have never tried it but it might be good! :)
