Introduction

Number of Servings: 6

Ingredients

    Dry quinoa, 1 cup
    Chickpeas, 1 can drained and rinsed
    Red bell pepper, 1 medium, diced
    Olive Oil, 1 tbsp
    Sun Dried Tomatoes, 2 pieces. very finely diced
    Lemon juice, 2 tbsp
    balsamic vinegar, 1 tablespoon
    Dijon or stone ground mustard, 1 tbsp
    Parsley, .5 cup minced
    Garlic, 2 cloves minced or pressed
    Scallions, 5 sliced whites and half of greens

Directions

Simmer quinoa in 1 1/3 cups boiling water with pot top on until water is absorbed (10-12 minutes).

Mix together garlic and all wet ingredients in a small bowl.

Put everything else (including cooked quinoa) in a big bowl. Pour wet ingredients over, and stir to mix. Add extra lemon juice, balsamic, salt, and pepper to taste.

Makes 6 servings as a lunch, more as a side
