    1 cup eggplant cubes
    2 cups sliced zucchinis
    2 cups yellow summer squash
    1/2 cup red pepper
    1 cup cubed fennel
    1/2 tsp red pepper flakes
    1/3 cup tomato paste
    1/2 tsp salt

    Heat 2 tbs of olive oil in cast iron skillet. Saute vegetable until soft and slightly brown. Add 1/2 tbsp of tomato paste, red pepper flakes, salt. Stir, cover and cook for 20 minutes, stirring often. Remove lid and continue to cook low heat until liquid has evaporated.
