Introduction

This is a wonderfully light and flavorful cake with no butter! You can dress it up any way you like and add your personal signature. Ingredients

    1 cup strained organic Yogurt (whole or low fat)
    1 cup sugar (brown and cane in a 1:1 ratio)
    2 large eggs (lightly beaten)
    2 cups flour (shifted) (may sub 1/2 whole grain)
    2 tsp baking powder
    1/3 cup olive oil (light flavored not EVOO)
    1 tsp vanilla extract
    1 tsp rum (optional)


Directions

Makes 10, 2"x1" pieces
1. Preheat oven to 350 F. Place rack on middle. Grease and prepare a flat 9"x13" bakeware.
2. Shift flour and add baking powder to it. Mix well.
3. Make sure all ingredients are at room temperature. Beat eggs and add sugar, vanilla extract and rum. May add any flavoring like orange zest or lemon zest (1 tsp). Mix well. Do not have to dissolve the sugar just mix it in.
4. Add the flour mix to it 1 tbsp at a tiime till all incorported. Do not ovrmix. Add the oil and lightly mix it in.
5. Pour batter into prepared bakeware and bake at 350 F uncovered for atleast 35-45 min till tester comes out clean. Switch off oven and let it sit for 20-30 min inside the oven. Then cool outside on a cooling rack.
Note: The batter is pretty dense and may take longer to bake. In case the top starts turning black cover with an aluminum foil- it still tastes pretty good. When done let it cool completely before unmoulding.
