Ingredients
-
2 small onions
2 garlic cloves
2 slices of ginger root
2 tbsp oil
300 grms chicken breast no skin
1 cup plain yogurt
1 cup tomato sauce
Pepper, salt, cinnamon, curry, nutmeg, clove to taste (one tsp of each, except clove that is really strong).
1 cup brown rice
Directions
Heat the oil in a pan, add the chopped onions, cloves and ginger, stir-fry. Add the chunks of chicken breast and curry (add a little water if needed).
In a bowl mix the tomato sauce, yoghurt and spices. When the chicken is cooked add the sauce at minimum heat (the yogurt should not boil).
At the same time prepare the brown rice. Boil two cups of water for each cup of brown. Add the rice to boiling water and let it cook for 30 to 40 minutes at medium heat. For better results soak the brown rice for three hours, but do not use that water to cook.
