Ingredients

    Phulkas

    2.5 cups whole wheat flour
    water to bind

    Sabzi
    1 cup mung dal(yellow)
    1 bunch fresh spinach leaves finely chopped
    1 medium ripe red tomato chopped
    2tbsps.chopped shallots
    1tsp.ginger -garlic paste
    2tsp.curry powder (I use Kitchen King any brand)
    0.5 tsp. turmeric
    salt to taste
    5 lengthwise sliced green chillies
    1tsp. cumin seeds
    1tsp.mustard seeds
    0.5tsp.asafoetida(hing)powder

Directions

Bind the whole wheat flour with water to form a pliable dough--not too soft nor too firm.Cover with a wet cloth and keep aside.Combine the dal with the shallots,chopped tomato,turmericand the sliced green chillies and pressure cook till soft(approx.2 whistles).In a nonstick wok dry roast the cumin seeds and the mustard seeds till they sputter.Add the asafoetida powder(hing) and roast for another 2-3 seconds.Add chopped spinach and mix well.Cover and cook on slow flame till spinach softens.Add the dal mixture and salt to taste and cover and cook till done.Divide the dough into 12 equal balls.Roll out the doughballs to form 1/8" thick and 4" diametre circles and roast these on a griddle till pale brown spots appear on both sides of each circle.Serve hot with the sabzi.
