Ingredients

    2 eggplants
    1 zucchini
    3 tbsp olive oil
    1/2 tsp garlic powder
    1/2 tsp oregano
    1/2 tsp basil

Directions

Grill: Slice zucchini and eggplant into thin slices. Coat with olive oil and spices. Will cook in 10-15 min.
Oven: Cut eggplant and zucchini into 1/4 inch cubes, coat with olive oil and spices and bake at 375 for 45-60 minutes, until vegetables are soft and brown.

    I sliced the vegetables and layered with a bread and onion stuffing and parmesan (I know it's added calories!) but makes a lovely main meal...started the veg on griddle, layered with the stuffing and parmesan, then finished in a dish in the oven. It was yum!
