Introduction

This is a simple Chicken meal that can be eaten on its own or used as a topping for pasta or rice. It is low in sodium and high in Vitamin C and Potassium. It is also a great low carb or low fat meal. Adjust seasoning to taste.

Ingredients

    Boneless Chicken Breast - 16 ounces

    Canned tomatoes (peeled/diced/crushed): 1 28 ounce can

    Medium Bell Peppers (Green/Red/Orange/Yellow): 2 medium

    Onion: 1 medium

    Mushrooms: 6 medium

    Garlic Powder: 1 tbsp

    Onion Powder: 1/2 tbsp

    Sweet Basil: 1 tbsp

    Oregano: 1/2 tbsp

    Bay Leaves: 2 tbsp crumpled

    Olive Oil: 1 tbsp

    Crushed Red Pepper: 1 tbsp

    Water: 0.5 Cup

Directions

Empty canned tomatoes into large covered pot and add seasonings (adjust to taste). Add half cup of water. Start cooking over low/medium heat.
Slice up peppers, onion, and mushrooms. Add to large pan over medium/high heat and stir fry until cooked. Add this to large pot with tomato and seasonings. Lower heat on pot to simmer.
Dice chicken breast into small (1/2 to 1 inch) cubes. Optionally season with some garlic powder. Add to large pan over medium/high heat with 1/2 tbsp of olive oil. Stir fry until fully cooked. Add to large pot.
Simmer at least 30 minutes or as long as you would like.
Makes four servings with 4 ounces of chicken each. Can be eaten in a bowl as a stew (my preference) or used as a topping for pasta or rice.
This one of those meals that is even better the next day.
