Ingredients

    4 cups (2 lbs) frozen hashed brown potatoes
    1/4 cup chopped onion
    1/4 teaspoon pepper
    8 oz reduced fat chedder cheese, shredded
    8 oz lite dairy sour cream
    1 can cream of chicken soup (99% fat free)
    1/2 cup corn flake crumbs

Directions

Spray 9x13 pan with fat free non-stick spray coating. Add potatoes, onion, pepper. Combine cheese, sour cream, and soup; stir into potato mixture. Sprinkle the crushed corn flakes over the top and bake (uncovered) at 350 degrees for 45 to 60 minutes.

    Easy to make, and the calorie/nutrition specs are good -- but a little bland. In retrospect, this could have been jazzed up easily with the addition of some herbs or a little garlic; I may try this again sometime and do that. Used Rice Crispies on top instead of Corn Flakes, and they worked well. - 6/2/13

    VERY GOOD! I replaced the sour cream with non-fat plain yogurt and left off the cornflakes. My husband also thought they were very good. - 12/31/08
