Ingredients

    non-stick cooking spray
    1.5 cups all purpose flour
    1 cup whole wheat flour
    1.5 cups oat bran (Hodgson Mill), or quick cooking oats.
    1/2 tsp. baking powder
    2 tsp. baking soda
    2 tsp. cinnamon
    1 Tbsp. pumpkin pie spice
    1 tsp. nutmeg
    1/4 cup + 2 Tbsp. melted margarine
    3/4 cup + 2 Tbsp. Splenda Sugar Blend
    1/4 cup brown sugar, packed (or 2 Tbsp. Splenda Brown Sugar Blend)
    12 ounces evaporated skim milk
    3 cups canned pumpkin
    1 cup egg substitute, liquid, or 4 whole eggs
    2 tsp. vanilla

Directions

Preheat oven to 325 degrees. Spray muffin tins with non-stick cooking spray. Mix dry ingredients (flour to nutmeg) and wet ingredients (margarine to vanilla) in separate bowls. Add wet ingredients to dry ingredients and mix together. Bake for 20-25 minutes or until toothpick inserted in center of muffin comes out clean. For mini muffins bake 15-20 minutes. Makes 32 regular size muffins or about 100 mini muffins.
