Ingredients

    1/3 C Butter
    3 Cloves Garlic, minced
    1 Small Onion, Chopped
    1/3 C. Flour
    6 medium/small potatoes peeled and cubed
    enough water to cover about 5 C. plus an extra 1-2 C. if desired
    3 chicken bouillon cubes.
    3 cups nonfat milk...I used dried nonfat milk

Directions

use a 4 qt. pan

melt butter and saute onion and garlic until butter becomes bubbly. Add flour. Stir until it is well combined and creamy. Once butter rue is bubbly, add potatoes and water all at once. Stir until it is well combined. simmer for 5-8 min. add 3 chicken bouillon cubes. Continue cooking until potatoes are just fork tender, about 10 min. Add the 3 cups milk, stir together, and let simmer for 5-8 more minutes or until potatoes are cooked through.
this makes comfortable servings for 8-10 people

    Very Good
    I just made this and it was really good. My boyfriend said it was perfect. I added about a half of a cup of potato flakes to thicken it up a bit. Other than that I follwed the recipe exactally. - 4/12/09

    I love this recipe; however, instead of using flour to thicken the soup, I mash up some of the potatoes and let it simmer to the desired consistancy. Then I add the potato chunks. - 3/23/09
