Introduction

Ingredients

1 lb. Ground Turkey
3 tbsp of Mole Sauce
1 Can Del Monte Diced Tomatoes - Basil, Garlic & Oregano - No sodium Added
1 Can Swansons Chicken Broth 100% Fat Free 33% less sodium
1.5 tbsp Chili Powder
3 slices Bacon
2 tbsp Minced Onion
1 tbsp Chopped Garlic
4 Roasted Serrano Peppers
2 Roasted Jalapeno Pepper
.5 cup raw kidney beans
.5 cup raw pinto beans
.5 cup raw black beans
Directions
1. Rinse and sort your beans, then put the raw beans in a container with 6 cups of water to soak overnight. This is the majority of your prep time.
2.Roast peppers over open flame until the skin just starts to separate from the pepper, appx. 2-5 minutes. Then split and clean out the seeds from the peppers.
3. After soaking, drain your beans.
4. In your crock pot, layer cut bacon, ground turkey, 1/2 chili powder, garlic, onion, peppers, bean, second 1/2 chili powder. Pour in the chicken broth and 1 can undrained diced tomatoes.
5. Put on the lid to your crock pot and let cook for 6 hours on high or 8 hours on low.
To save time, use canned beans and peppers. This will increase your sodium level however.
