Introduction
This recipe is so easy to make!Because I have a Lap-Band, I used the SPLENDA® Brown Sugar Blend in this recipe but if you want or need to avoid all sugar, you may replace it with 3 Tablespoons of the SPLENDA® that measures like sugar (not the packets) and you will need to find a sugar-free ketchup. The nutritional information will need to be changed accordingly.
It is important to begin with very fresh and very lean boneless pork chops. I found a large Family- Pack of 6 chops that weighed 2.30 pounds. When I removed every last bit of fat, I ended up with exactly 2 pounds of lean meat.
Other similar recipes call for the sauce to be cooked and thickened before pouring over the chops but I found that the sauce thickens very nicely on its own without pre-cooking it, thus saving a step and time!
Just a side note: The first time I made this, I forgot the ketchup and it was still delicious. This recipe is so easy to make!

Ingredients
-
6 boneless, very lean pork chops, with all visible fat removed. You should end up wth 2 pounds of raw pork.
3 Tablespoons (packed) of SPLENDA® Brown Sugar Blend
2 Tablespoons cornstarch
1 Tablespoon cider vinegar
1 Tablespoon KIKKOMAN® Less Sodium, Soy Sauce
1/2 cup ketchup
1 - 8 oz can (1 cup) crushed pineapple, in it's own juice
Directions
Preheat oven to 325 degrees F.
Place pork chops in a 13"x9" baking pan sprayed with PAM® Olive Oil flavored cooking spray.
In a small bowl, whisk together the SPLENDA®, cornstarch, vinegar and soy sauce until there are no lumps from the cornstarch. Stir in the ketchup and the pineapple. Pour over the pork chops and cover with aluminum foil.
Bake for 1 hour and 15 minutes.
Makes 6 servings.
Divide sauce evenly between each serving.
Each pork chop will yield about 4 ounces of cooked meat per serving so you may want to have 1/2 now and 1/2 at another meal.
