Ingredients

    2 quarts hand-slivered cabbage [half a head]
    2 stalks very thin sliced celery with leaves
    a slivered carrot
    2 T vinegar, some balsamic for sweetness
    2 T water
    2 T oil, 1 T will do but none reduces quality
    2-3 tsp. sugar or a good substitute
    Fresh ground black pepper

Directions

Coleslaw, all these are to taste.
This is good for you; if you are going to eat it only
because it is good or you, then eat plain cabbage.
This will settle to 2/3 volume
2 quarts hand-slivered cabbage [about half a head]
(by hand gives cleaner cut than grating)
2 stalks very thin sliced celery with leaves
a slivered carrot
2 T vinegar, some balsamic enhances sweetness
2 T water
2 T oil, 1 T will do but none reduces quality
2-3 tsp. sugar or a good substitute
Fresh ground black pepper
Mix and let sit, mix again, serve.
With a sharp knife hand slivering is fast and makes
very good texture and appearance.
This keeps well, travels well,
sweetened bottled vinaigrette can be used.
Mayonnaise does not work as well.
