Number of Servings: 8

Ingredients

    4 chicken breast, cut into strips or in half
    3 Tbsp oil (I used canola)
    1 1/2 Tbsp lemon juice
    1 tsp Worcestershire sauce
    1 tsp Dijon mustard
    1/2 tsp garlic powder
    1/8 tsp pepper
    2/3 cup finely crushed seasoned croutons (I use toasted bread crumbs)
    1/3 cup grated Parmesan cheese

Directions

In a zip-lock plastic bag, make marinade by mixing together the oil, lemon juice, Worcestershire sauce, mustard, garlic powder and pepper. Add chicken, seal bag and shake to mix and thoroughly coat chicken. Refrigerate at least 15 minutes.

On a shallow plate, mix crushed croutons and Parmesan cheese. Remove chicken from marinade and drain; reserve marinade. Add chicken, on piece at at time, to crouton mixture, dredging to coat. Place chicken in greased shallow baking dish; drizzle reserved marinade over chicken.

Bake in 400 degree oven about 18 minutes or until fork can be inserted into chicken with ease. Makes 8 servings

    Incredible!
    This was absolutely phenomenal. I used a mix of Italian style and regular breadcrumbs as I didn't have croutons, and it was delicious. Will definitely be making this again (And again, and again!) - 3/20/11
