Ingredients

Chicken or vegetable broth or bouillon.
Tofu
Fresh tomato
Frozen spinach
Garlic
Ginger
Tomato juice
Lemon juice
Black pepper
Directions
In a medium-sized soup pot, bring a liter (or roughly 32 ounces) of chicken or vegetable broth (or bouillon) to a boil.
Chop the tofu into small cubes.
Add tofu and replace lid onto pot. Allow to boil for five minutes so that the tofu absorbs some of the flavor of the broth.
Chop the tomato into small cubes.
Add tomato and replace lid. Bring broth back to a boil and let it continue for three or so minutes.
Add frozen spinach cube or if you do not have cubes, roughly half of a package of frozen spinach OR about 1/3 of a can of canned spinach.
Chop the garlic and ginger into very small pieces and add to the soup.
Add the tomato juice.
Allow everything to come back to a boil until the spinach is completely defrosted.
Add the lemon juice to taste.
Add black pepper to taste.
Makes 4-6 servings.
