Introduction

These are yummy. Still have fat, carbs, and sugar, but low in saturated fat. These are yummy. Still have fat, carbs, and sugar, but low in saturated fat.

Ingredients

    generous 1 c. rolled oats
    1 c. skim milk
    1 egg
    1 c. superfine sugar (I used regular sugar)
    1/4 c. light olive oil
    1 c. all purpose flour
    2 t. baking powder
    1/2 t. baking soda
    1/2 t. cinnamon (optional)
    2/3 c. raspberries
    2 T. rolled oats for sprinkling on top.

Directions

Preheat oven to 375F. line 12 muffin cups w/paper liners. put the oats into a bowl and add milk. In a pitcher or small bowl, mix together egg,sugar and olive oil to combine. Sift the flour, baking powder and baking soda (and cinnamon if using) together in a bowl, then gently toss in raspberries. Gently stir in egg mixture, then oats and milk. Spoon mixture into muffin liners and sprinkle remaining oats on top. Bake 15-20 minutes or until well risen and firm.
